We want to share with you one of our favorite gluten free, wheat free, soy free, nut free, and non-dairy dessert recipes.  It's easy and loaded with antioxidants.  Sometimes, nothing beats a ripe, delicious, and satisfying fruit cobbler for dessert!  We borrowed the original recipe from "Clean Eating" 2009, and tweaked it to make it even healthier!  Our version is lower in added sugar and gluten and wheat free.  The added sugar is minimal so you can enjoy without the guilt and savor every bite bursting with berry goodness. This dish is super easy to prepare, too. (*As a side note, we chose all organic ingredients) Here's what to do:

3 C frozen mixed berries+ frozen peaches
3/4 C gluten free Oats
1/4 C gluten free cereal flakes
1.5 T Coconut Oil
1 T  white grape juice (apple works, too)

2) In large mixing bowl, stir together the sugar, coconut flour, cinnamon, baking powder, and salt.  Add the apple slices and the berries.  Mix together and add the remaining ingredients until coated and spread evenly in greased pie dish. (If you'd like, you can save a bit of the oat/cereal flake mixture for the top. Totally optional.)

BAKE 375 degree for 30 minutes.
Serves 6.  Enjoy!  Please tell us how you like it!  We love to hear from you and see your pictures and comments.  :)
