Dairy Free Eggnog! SO Delicious!

Every Christmas season I make my Grandma's famous eggnog recipe.  I don't even really like eggnog, and certainly not the store bought kind, but my Grandma's recipe is SO delicious it's a treat I look forward to each year!  This past year, however, I've gone...gulp...dairy free!  So, when my 7 year old daughter asked me to make eggnog a few days ago, I pulled out Grandma's recipe and tweaked it to be dairy free.  I made the simple swap of cream and milk to unsweetened vanilla flax milk.  The flax milk offers a slightly nutty flavor that goes well with eggnog.  The fluffy egg whites keep the eggnog texture creamy, so it was satisfying and made a beautiful presentation as well.  My daughter loved it so I think it's a new holiday winner in our house.  I've shared the recipe with you here!  Cheers!

6 eggs 
4 C Unsweetened Vanilla Flax Milk
3/4 C sugar
Nutmeg to taste
Cinnamon to taste

1.Separate the eggs with whites in a mixing bowl and the yolks in a small bowl to the side.
2.Whip up the egg whites until the peaks are soft but stiff.  Transfer the fluffy egg whites to a different bowl. Set aside.
3.Rinse out the mixing bowl and Add the yolks and sugar.  Beat until mixed.  
4.Slowly add, 1 C at a time, the unsweetened flax milk.  Scrape the side of the bowl with a rubber scraper to be sure all of the yolk/sugar mixture is combined with the flax milk. Beat together until bubbly and fully mixed.
5.Transfer to your serving bowl.  Fold in the fluffy egg whites.  Sprinkle on some nutmeg and a bit more cinnamon. Fold in a bit more.
