Veggie Better

Here at MANMAKER SPORTS our motto is "Become Your Best" and we love it when we find news ways to become stronger, better, and healthier!  Lately, we've been trying out what it's like to make vegetables the "star" of the dinner plate.  Protein and carb portions have decreased to the side dish category and it's all about the veggies as the main attraction.  This minor shift in dinner approach has been easy and absolutely delicious! The most notable positive change seems to be in general outlook and mood.  Patience seems to come more easily and we're occupying a generally a less reactive state of mind.  Yup, we're more zen and we like it.  
A favorite recipe that we've been coming back to again and again we call our "Mighty Sauce".  It's Mighty because it is super rich in many different vitamins, minerals, and nutrients that are all amazing for your health.  Easy to make, you really can't mess it up because a little more of this, or a little less of that, and it's still sooooo gooood!  Protein packed side dishes that compliment Mighty Sauce are white fish or chicken breast. Steamed, organic broccoli is a nice side as well.  Below is the recipe!  Let us know what you think!

Few handfuls of mini organic carrots chopped   (Great beta carotene, fiber, antioxidants)
5 cloves minced garlic    (Super rich in nutrients, boosts immunity)
Half med yellow onion diced  (Vit. C, Chromium, reduces inflammation, boosts immunity)
10 Baby Bello mushrooms sliced  (Nutrient rich in Selenium, Niacin, Copper, Vit B-5
3 large leaves Swiss chard finely chopped   (SUPERFOOD filled with phytonutrients!)
1 jar organic diced tomatoes  (Lots of Vitamin C, antioxidants, fights free radicals)
6 fresh basil leaves  (Full of flavonoids for cellular protection; anti-bacterial properties)
sprinkle Himalayan sea salt   
freshly ground black pepper  
few pinches of Herbs de Provence
Saute carrots, garlic, onion, and shrooms in 1T olive oil about 5 minutes.  Add diced tomatoes, basil, Swiss chard, s+p, Herbs de Provence.  Simmer 15 minutes.  Yum!
